Similar both in style and presentation to Vacherin Mont d'Or – a washed rind, an encircling bark collar from local pine trees, and its final placing in a box to be eaten with the rind removed – differentiated however by the milk-type (goat) and the provenance (Pyrénées as opposed to Jura). This is a very rich and creamy cheese with a sweetly sappy taste. Best season May to September.
