Patricia visited the cheesemaker on her way to Andorra. This was not intentional but merely stumbled upon the tiny dairy tucked away in a hamlet off the main road. The cheeses are made using raw milk and are either with a bloomy crust like a Brie with a very rich almost melting texture or brine washed giving a rose-apricot glow to the moist rind. The flavours are full bodied and nutty in keeping with the Spanish style and go well with dry red wines. This is a young cheesemaker whose cheeses are gaining recognition in all the best restaurants in Spain.
