From the east coast called Orientale, the cheese has a light minerally, nutty flavour with a herbal tang on the finish. The sheep graze on stony terrain where there are abundant scrubby 'maquis' bushes, which are very fragrant. This gives the cheese a style and individual taste very typical of the island. Best season spring to early summer and then autumn to December.
