Squid & Octopus

Before you all leave the city for holiday coastal retreats join us for one of our last summer workshops. These will start at a slightly later time and will be followed by supper at 8pm. For these workshops we have chosen quintessential summer ingredients – but not always the easiest to prepare; Alessandro will be sharing his culinary secrets from a professional kitchen.
You'll never worry about chewy, rubbery squid or octopus again! Once you have mastered the preparation you'll learn these marine molluscs are extremely versatile – whether grilled, deep-fried, seared, stuffed or slow-cooked in wine – they make the most delicious summer dishes. Add a chilled glass of wine and you're in bliss.
Alessandro will show us all the necessary skills to tackle these dishes with ease at home; first he will deep-fry the squid & octopus with accompanying homemade aioli; the octopus will then be grilled & served in a salad with potato, lemon & capers; and finally he will take us through a 'stew' of squid slow-cooked in red wine, peppers & chorizo. We will finish with homemade Limoncello Granita.
