This is an unpasteurised milk cheese in the Tilsiter style of the region, but with a difference since the cheesemaker, Stefan Bühler, creates his own culture and rennet to coagulate the cheese and washes the rinds in untreated seasalt giving the ultimate taste a richness, fruitiness and texture that is totally its own style. This is the first cheese I tasted on a trip to Switzerland that really highlighted the dedication of a small independent producer capable of greatness.
