From the heart of the Cevennes – where the sheep graze on the protected hillside pastures of the La Causse Mejean – this family-run farm produces very traditional styles of cheese, from soft to hard, taking into account seasonal changes and the way the milk naturally changes given the weather and changing pasture conditions. The rich dense creaminess has an smoky sappy flavour from the bark collar, and there is a definitive farmy taste that punctuates the complexity. Partner with big bold local red wines.
