From the Ronco del Picchio vineyard with Sandro Fay as oenologist. Nebbiolo grapes (locally known as Chiavennasca) Cane racks and wooden frames are part of the vinification process for this wine as the grapes are passed through the 'appassimento' method where they are slowly dried in carefully monitored airy cellars to give a greater depth of richness and higher alcohol content to the wine, which is also soft and smooth in style. The maturing process also uses barrique barrels which imparts a rich, opulent woody taste to this elegant wine. Partners the lovely creamy Piedmontese Robiola di Langhe cheeses perfectly.
