Made by a co operative the Lucerne Canton in Central Switzerland. Aged over 30 months, this is similar in style to a Grana or Parmesan but less salty. It has the same grittiness and fruity rich flavours, but the nutty full bodied long taste goes extremely well with sharp white wines or used shaved over pasta or vegetables. There is also an affinity to dry champagne too.
