Over the years we have forged relationships with both cheesemakers & affineurs. One in particular is Monsieur Denis Provent. He, his father & his grandfather before him were cheesemongers & affineurs in the heart of Chambery in the Savoie. They introduced us to the finest cheesemakers, from Vacherin to Tomme de Savoie & our signature cheese, the Beaufort Chalet d’Alpage.

M Provent sadly retired this summer. This has led us to forging new relationships with the cheesemakers themselves.

Each October, M Provent would venture to the Vacherin Dairy of Sancey Richard & select the best Vacherin for his 'very special customer in London’ – and the tradition continues with Patrick Sancey Richard, who now heads up the dairy; he takes the same care & attention to ensure our Vacherin are perfect.

A tasting of cheeses from the Savoie sourced through M. Provent.
Patricia visited M Provent many times, for this evening she will give us a fascinating insight to the cheesemakers of the Savoie with some of the photos that she took of the mountain pastures & cheesemakers, including the wonderful caves under the monastery Abbaye de Tamie with Father Bruno.

For this tasting we will pair a fabulous selection of Savoie cheese from Beaufort Chalet d’Alpage, to Reblochon, to Bleu de Termignon, accompanied by Rene Quenard’s Savoie Wines.

VACHERIN HAUT DOUBS marks the start of the autumn season for us. As they start to trickle in at the beginning of October we wash them in Arbois. Once ripened the billowy crust takes on a pinky peach colour with an earthy sappy aroma. The bark around the cheese helps to achieve its texture and perfume. This cheese is superb, with a meltingly rich pate and a taste verging on clotted cream.
