Domaine Marc Colin Saint-Aubin, Cote d'Or. When Marc Colin retired his 3 his sons continued winemaking on the land utilizing techniques without treatments on the land and now ploughed exclusively. Then the time came for Marc to divide the vineyards in order that his sons and daughter could pursue their own way of winemaking, and Pierre-Yves formed his own named vineyard with his wife, Colin-Morey, with the two other sons continuing the Marc Colin label - Damian overseeing the vinificaton and Joseph the viticulture. They are looking for a more fresh and lively expression to bring forward the minerality of the wines, and they are not using any enzymes or commercial yeasts and being non-filtered there is definitely more earthiness and also a lightness that is countered by the dry finish. For the 2004 the first hint on the nose is elegance and refinement even a little restrained, but the taste is entirely serious and complex, showing its kinship to the terroir but not overtly so. Santenay was the first Burgundian sourced directly in 1993 as a perfect wine for cheese.
