Julie Cheyney's first cheese was Tunworth – made with her friend Stacey Hedges – and she's now started her own production, using milk from a neighbouring farm. The milk is slowly and gently turned into curds with little intervention – simply lifting the curds and ladling them into moulds, followed by daily turning, until they are ready for sale. The flavours of the pasture are admirably intact, giving the cheese an earthy richness that becomes more evident as it ages.
