Fabrizio Ressia took over his Grandfather’s estate in 1997 and immediately started to update and develop new practices. In the glass the wine has a brick red colour with orange/russet edges. The aromas are intense with wild rose and viola, vanilla, raspberry and full body rich currants. The flavours are round and balanced with plenty of body and the dry tannins show at the end. A bit austere and reflective with a rather masculine edge. Weather patterns prior to picking of the grapes are vital for this wine producer. He has followed a more thoughtful approach and any dramatic changes can play havoc with the flavours of the grapes. Soft pressing of the grapes are then left at low temperatures to soak for 10-15 days. Then Barrique aged for 30 days before transferring to steel tanks for 30 days and then bottled. Minimum ageing in the bottle is 6 months, but it is much better to leve this wine for 12-24 months at 8-12 degrees. Enjoy with roast red meats and game, as well as fine full flavoured cheeses.
