Semi-hard washed rind cheese with a stronger, spicier flavour than the French version and a little more dense in texture. Use in the same way as the French version, and perhaps serve with the Chateau Ripaille white wine which has a delightful acidity to offset the rich, melting texture. (Approx weight 5.3kg. 45% fat)
