Dry, light, with a slight almond bitterness to an otherwise ripe fruit taste. Well-structured, as the vines are situated on hilly slopes, which result in good drainage and an even amount of sunlight. The Prosecco is a late-ripening grape variety, and the vinifiction method is not too hi-tech; the grapes are gently pressed and then the Charmat method is deployed, in which the second fermentation is performed in a pressurised tank before bottling. Perfect as an aperitif or making cocktails.
