CHEESE

  • Sinodun Hill (Rachel Yarrow) | Oxfordshire, Pasteurised Goats's Milk. 1 unit. In the shape of a truncated pyramid with a nutty geotrichum rind. The pate has a mellow tangy flavour, with faint citrus notes.
  • St Jude (Julie Cheney) | Suffolk, Unpasteurised Cow's Milk - 1 unit - The milk is slowly and gently turned into curds with little intervention – simply lifting the curds and ladling into moulds, turning daily until ready for sale.
  • Wigmore (Anne Wigmore) | Berkshire, Thermised Ewe's Milk (200g) - A sheep’s milk cheese using vegetable rennet. The sappy fruity rich flavour is quite sharp & crumbly when young, but with maturing the edges begin to melt making it a velvety rich mellow tasting cheese.
  • Tunworth (Stacey Hedges) | Hampshire, Pasteurised Cow's Milk - 1 unit. Whilst the almost melting edges cling to the fudgy centre with the rind giving a non-invasive taste or aroma, this is a great leap forward for British cheesemaking, taking on French styles of cheesemaking but with a distinctly English edge.
  • Cote Hill Blue (Mary Davenport) | Lincolnshire, Unpasteurised Cow's Milk (200g) - The pate has a rich, creamy quality – rather like Camembert – and due to the cellar-maturation the rind develops natural blooms, imbuing the interior roqueforti moulds with a distinct earthy, mushroomy quality. This is a new style of British blue.
