Casalgismondo Farm is situated in the centre of Sicily, close to the Greek-Roman site of Morgantina and the famous city of Piazza Armerina, known for its mosaics. Maria Rita d’Amico makes very traditional cheeses (this in particular is organically-certified), and this is the perfect example of how a sharp, salty, robust Pecorino should taste. This is the cheese we are offering when asked for a Romano style. The locals would eat this cheese with a local rough-style wine, but there are many other ways of enjoying the cheese, be it grating over pasta or shaving over a salad.
