Casalgismondo Farm is situated in the centre of Sicily close to the Greek-Roman site of Morgantina and the famous city of Piazza Armerina known for its mosaics. Maria Rita d’Amico makes very traditional cheeses and the Semistagionato is half-matured to give a lovely savoury, spicy hit of flavours. Together with the fully matured cheese and Parmigiano Reggiano his would be the ideal blending of cheese for Pesto. Equally good with a robust dry red country style wine with crusty bread and a green salador as an ingredient for a cheese sauce.
