100% Dolcetto. Fabrizio Ressia took over his grandfather's estate in 1997 and immediately started to update and develop new practices. This Dolcetto is delicious and different. There is a lot going on with the flavours, and after the pressing and fermentation the wine is left to rest in wooden barrels for eighteen months. The wine is then passed into stainless steel tanks for thirty days before bottling. The garnet red hue has an ethereal violet edge in the glass and the aroma is rounded with hints of vanilla and wood rose. The balanced flavour is full-bodied with moderate dryness and low acidity.
