Named after a Revolutionary War scout killed defending a blockhouse on Bayley Hazen Military Road, this bloomy rind cheese was developed by Mateo Kehler. Made and matured on-site at the Jasper Hill Farm, the flavour is buttery, bright and savoury when young. Longer-aged cheeses find the pate creamier, taking on the aroma and flavour of brassica vegetables.
