TRADITIONAL RENNET

A hard cheese with a rind that has been rubbed and brushed, with a texture that is, at its most aged stages, similar to Parmesan, tasting fruity and nutty. This is a farmhouse-made and -matured cheese. The younger d’Allevo cheeses have a more supple texture, with scattered holes and a taste that is milkier and woodier, only hinting at the strength that the more mature cheeses will acquire.
