Named after the cheesemaker’s mother-in-law who does not eat Blue cheese (for which the farm is famous), this is an unpressed cheese in the style of traditional cheeses of Scotland before cheddaring was introduced. The sharp lactic edge is reminiscent of Wensleydale, but again that ‘turnip’ taste and aroma comes forward in typical style and whisky comes to mind as the drinking partner.
