Large rectangular ‘log’ cheese with an ash rind matured to include lovely patchy soft moulds. The taste is light and sweetly nutty with a crumbly texture. The surprise with this cheese is that the look from the outside rind suggests a spicy and strong cheese, yet within it is gently and milky showing how delicate Spanish cheeses can be in spite of their looks!
