A little larger than a Crottin, this is a soft and creamy bouton frais with a natural soft wrinkled bloomy rind. Eaten fresh they are rich and fudgy with light fresh floral notes, rather like a young fresh white wine. Often matured to hard little buttons and preserved in Marc de Bourgogne to taste very strong.
