TRADITIONAL RENNET

Similar in size to a Crottin, but shaped in a tapered drum. The natural rind is soft and wrinkled when young, maturing into a smoother surface with scattered blue-grey moulds. Eaten fresh it is rich and fudgy with light fresh floral notes (rather like a young white wine) but with a little maturation the flavours become toasted and nutty with a dense brittle texture. Often preserved in Marc de Bourgogne, the taste can become quite intense indeed.
