An unusual mountain cheese made with Ricotta cheese. The fresh cheese is packed in a muslin cloth to resemble an oyster shape. It is then left to drain and dry out. The muslin is removed and the cheese is covered with aromatic herbs, such as rosemary, thyme and black peppercorns and then matured in the cellar until its coating dries out and patches of white bloomy moulds appear. The resulting taste is gentle and nutty with a lovely character of aromatic herbs. As it ages it becomes stronger in taste.
