This is from a small co-operative, COASA, making cheeses for the farms. Los Beyos cheeses are all small and cylindrical in shape. They are made up in the mountain pasturelands during the warmer periods of the year in the mountain huts scattered throughout the terrain for cheesemaking and in farmhouse kitchens when the days are short and in the harsh winter months. The cheese is solidly crumbly and pale yellow, slightly acidic, mature in flavourand is especially good when paired with Chorizo or local Ham.
