Semi-soft cheese with a firm golden orange washed gently ridged crust bound with five strips of raffia, giving it its nickname “The Colonel”. Supple, springy texture with scattered pinholes, pungent aroma and rather spicy, requiring a bold red wine, strong cider or a slug of Calvados (try our farmhouse Pierre Bauche apple or pear variety).
