An ingot of pure goat’s milk with a flaky, fudgy texture and a natural wrinkled rind. The goats graze on meadows studded with thyme and this is clearly defined in the taste of the cheese. It is light, gently earthy with the richness of the milk and the scented herbal essence at the end. A perfect handmade cheese from the Monastery at La Dalmerie under the supervision of Father Marcel, in the heart of Herault. Season from Spring to Autumn.
