Anton Holzinger has been making soft brine washed bloomy rind cheeses since 1991. It is only recently he has been experimenting with a Limburger recipeand what is interesting in this cheese is that although there is a high aroma due to the bloomy rinds coming into contact with the salty brine solution, the cheese itself is mellow, rich and creamy.
