Anton Holzinger has been making soft brine-washed bloomy cheeses since 1991. It is only recently, however, that he has been experimenting with an organic Limburger recipe. What's interesting is that although there is high aroma – due to the bloomy rind coming into contact with the brine solution – the cheese itself is mellow, supple and creamy. Very friendly to crisp white wines.
