Supple-textured mixed cow's and ewe's milk cheese with a fruity, nutty bite and a smooth, chewy texture. The rind has been lightly brine-washed and -rubbed to give a pale ochre glow, and the aroma is gentle and earthy. Best eaten quite young – the matured cheeses develop a more pronounced, strident taste.
