This speciality cheese from the Schmidhauser cheesemakers crosses a border for its maturation. It is named Le Cousin because their cousin Jurg's dairy makes the cheese in Switzerland, after which time it is refined at the Haute Savoie dairy near Lake Annecy. The fruity intensity of the cheese – which is surprisingly just 32% fat – has a rich underlying creaminess, and the brine washing on the rind lends itself to the sweetly salty tang in the depth of its flavours, which tend to linger long and persistent on the palate.
