The area of Lauragais is steeped in history and many artisans – from cheesemakers to cabinet makers – can be found in this part of France, located just south of Toulouse. This cheese is matured three weeks before sale, and is creamy just below the rind with a strong and goaty appeal. Topped with a baby bay leaf, it is perfect with Languedoc Roussillon, as well as the more minerally, terroir-driven red wines of the region.
