This is a youthful version of a Pecorino style cheese, but with oak smoking as an added flavour. Oak is used from the Estate and the smoking is light giving the cheese a sweet earthiness. The herd grazes on pasture whenever possible with the addition of added feed incorporating ‘mash’ from the local whisky distillery.
