A pasteurised (for the moment) Organic Guernsey milk hard cheese with naturally grown patched mould crust. In the crumbly Cheddar/Cheshire style but with a rich and buttery texture and nutty, earthy taste showing mineral sharpness at the end. This is a very small production from a farm supplying us with raw milk cream.
