The Stadelmann family have, for the past 25 years revolutionized cheesemaking in this part of Switzerland. Their split from the Tilsiter consortium meant they could experiment and devise new formats and this particular cheese is one of them. The secret weapon is the covering of the buds and flowers from the hay they grow for the cattle-fodder. You can detect the floral almost pastoral flavours coming through the cheese, which has a light nutty taste and a dense smooth texture.
