Gouda with Truffles

This is a traditionally made farmhouse Gouda with the addition of Italian truffles through the curd. The cheeses are matured for about 4 months to obtain the right level of flavours of cheese and truffle. There is still the salty, chewy taste of the cheese, but the earthy taste of truffles is delicate.
