TRADITIONAL RENNET

This is a traditionally-made farmhouse Gouda with the addition of Italian truffles spread throughout the curd. The cheeses are matured for about 4 months to obtain the right level of balance between the cheese and the truffle. There is still the salty, chewy taste of the pate, but the earthy taste of truffles is persistent, and takes the whole arc of flavour to new heights.
