A traditional-style Caerphilly with a superb natural grey rind which feels soft and velvety to the touch. Aged in extremely humid cellars – cheeses were traditionally stored in the basement cellars of Welsh farmhouses. The cheese has a familiar crumbly texture, yet tastes fresh and creamy, with lovely earthy mellow tones. Upon maturation the cheese becomes dual-textured; rich and buttery – almost semi-soft – under the rind, and crumbly and citric in the centre. A very versatile cheese to use in cooking, crumbled over vegetables, or as part of a cheeseboard selection.
