A new British washed rind cheese made by the Lyburn Dairy and matured by the late, great James Aldridge's apprentice, James McCall; Francis was the unused birth name of Aldridge. Matured for ten weeks of brine-washings, giving a pinky-beige tinge to the sticky rind – not to mention a wonderfully pungent aroma – the texture is supple, marrying gorgeously with its long, fruity finish. A worthy tribute by McCall to the skills passed down by his mentor.
