Hard crumbly texture with a dry fruity taste and often served as a dessert cheese with the sweet fruit cheese Membrillo. The crust is pale gold and ridged with a woven basket pattern of the traditional containers used to mould the cheeses. The crust is rubbed in olive oil and then the cheese is matured in cool cellars. We prefer the artisan made Casa del Bosque cheeses which we source directand aged around 6 months, tasting nutty and very savoury.
