This cheese has been aged at least 18 months and the texture becomes grittier and fruiter and the colour of the cheese is darker. A cheese to savour on its own, maybe, with a glass of dry red wineor maybe Port, but you will definitely be delighted by the richness of the texture together with the fine full bodied flavours.
