TRADITIONAL RENNET

Produced organically from a free-range herd of sixty goats, the cheesemakers add geotrichum candidum (most famously used to create the bloomy rinds of Brie and Camembert) to the curds, allowing earthy blooms to form in our colder, high-humidity fridges. When properly matured the texture should be close-textured and slightly broken down below the rind. The flavours, which are lovely and complex for such a young cheese, are floral and farmy and truly reflect this unique Swedish terroir.
