Charles Martell is best known for his Stinking Bishop cheese, but this cheese is made from an original recipe made by nuns from Caen (in Normandy) who settled in Gloucestershire in the thirteenth century. There is a lovely sweet herbal taste from the lanolin-rich ewe's milk – bordering sometimes on milk chocolate – and the style is not unlike northern French and Alsace cheeses. A fine example of modern British cheesemaking skills: thinking of the future while referencing the past.
