The weather plays a big part in the taste of this cheddar. Aged a minimum of 14 months. The pastures are exposed to the elements of the Atlantic, with the salty briny flavours very evident. Mashed barley used in the whisky-making from the local distillery is added to the feed, allowing strong herbal flavours to come through, with a satisfyingly sharp hit coming into play in the persistent finish.
