Bordeaux: An Evening of Food, Wine & Antiques

SOUTH WEST FRANCE:
A FEAST FOR OUR SENSES IN EVERY WAY: Chiner à Bordeaux et Alentours

In April Patricia & Sarah accompanied Stuart Paterson, our friend & antiques dealer in London, to the annual Antique fair in Bordeaux.
Stuart scours Europe for beautiful pieces visiting Paris every month, and occasionally he can be hired as a guide to take people around the antique markets in France. Once he has ascertained your style, he can lead you straight to the appropriate dealers & help with those tricky negotiations with the dealers.

This was an exceptional weekend in both our antique finds and the gastronomic fare we enjoyed - as we also visited the famous cheese affinuers in Bordeaux Jean d'Alos for a tour of their beautiful cheese maturing cellars, sourced a new Jambon from Bayonne & indulged in fabulous local fare including an exceptional Côte de Boeuf & the famous duck fat chips at La Tupina! The freshest produce was to be found at the Sunday morning market on the quay where we ate chouquettes & Cannelés Bordelais

Inspired by our trip we invite you to join us for an evening of South West French food & Antiques here at La Fromagerie as the space becomes an antique salon for the evening, Stuart will be showcasing his wares that he has sourced from his many trips to and around the Bordeaux region.

Stuart has painstakingly sourced beautiful glassware, antique linens, classic storage pots along with armoires and stunning service platters and bowls amongst many other exciting finds. All reasonably priced there will be something to suit every pocket.

As you browse the antique salon with a chilled glass of the local Pineau des Charente we invite guests to indulge in classic French fare of cheese, wines from Chateau le Roc & charcuterie along with a selection of tastes inspired by our trip from duck confit to Bayonne ham with celeriac remoulade not forgetting the duck fat chips & sugary chouquettes.

This evening, set to a little french music, will be perfect for guests to come and indulge in good food & wine with friends as we invite you to browse our south west finds of food & antiques.

Spring Brunch: Asparagus & Hollandaise

NEW SEASON ASPARAGUS WITH COOKING DEMONSTRATION OF SAUCE HOLLANDAISE

Whilst all the April showers may be good for our gardens & parks too much rain is not good for the asparagus. However Pip, our asparagus grower in Essex assures us that we will have an abundance of his beautiful delicate tender asparagus stems soon enough.In celebration of this perennial favourite we invite you to join us for a Spring brunch; beginning with coffee & pastries on arrival followed by a demonstration by our head chef Emma - how to make sauce hollandaise.
Guests will then be served a quintessential spring brunch of homemade English muffins with poached organic free range eggs from Rookery farm alongside new season asparagus & sauce hollandaise all complemented by a chilled glass of Crémant d'Alsace.

A Spring Smörgåsbord Supper

We continue our celebration of Spring produce as we invite you to join us for A Spring Smörgåsbord supper co-hosted with Patricia & Hansen & Lydersen Smoked Salmon Producer Ole Hansen, a Norwegian based in Stoke Newington. We first met Ole at Broadway Market with his beautiful smoked salmon which he smokes in his brick kiln of his Stoke Newington smokehouse. Each Hansen & Lydersen salmon is carefully hand-filleted and hand-salted according to a family recipe devised by Norwegian fishmonger Lyder-Nilsen Lydersen in 1923. Ole uses a unique blend of juniper & beech wood for a pleasantly sharp and piquant aroma - quite simply, it is delicious!
Ole will be talking about how he selects & smokes the salmon & what sets his salmon apart from the mass produced vacuum packed varieties. He will also demonstrate how to cut the salmon which takes inspiration from the Japanese sushi style cut.

We have also been inspired by a book written by Gert Klötzke & Niclas Wahlström they have written a stunning book celebrating the Swedish Smörgåsbord in a modern style so with their kind permission our kitchen will prepare various Nordic inspired dishes from Baltic style cured herrings including a lingonberry & black pepper cure, a salad of spiced duck breast, potato salad dressed with dill and hazelnut oil along with a selection of Nordic inspired salads, excellent rye breads & Swedish style crisp breads all paired with a chilled Gros Manseng white wine.

Patricia will then follow with a tasting plate of cheese inspired by her second book entitled CHEESE a global journey of taste, tradition & terroir featuring some of the world's best artisan cheeses, published in April 2010 the book has been translated into Russian, Japanese, US & Swedish.
Patricia has sourced unpasteurised organic cow's milk cheeses from Almnas Bruk Farm in Hjo, Sweden.
These are unique handmade cheeses using a traditional recipe, and the dairy have also enlisted the help of a retired cheese maker who made the cheeses many years ago.
Beer is the obvious pairings and we will be tasting a Norwegian beer - from the Nøgne Ø Brewery along with a chilled Gamay.
Supper will finish on a sweet note with lingonberry & vanilla puddings & Småland Cheesecake. This event promises to be a delicious and insightful journey celebrating the tradition & the future of Nordic food.

Spring Tasting Supper

We are delighted to invite you to an evening of spring fare tutored by Patricia Michelson

With the shop brimming with spring fare we could not help but devise a delicious tasting supper of all the fabulous produce taking inspiration from France, Italy & the British Isles.
We begin with our new Spring Prosecco Cocktail, our latest collaboration with Le Labo the fabulous olfactory, inspired by one of their scents, Jasmine 17, we have made a delicate citrus based 'syrup' with orange flower water, jasmine, lemon, vanilla & almond amongst other ingredients which all make for a fabulous marriage with our Prosecco.
For supper we will be serving rich creamy Burrata with Pealeaves & summer truffles, from the British Isles we will have sea trout with new season asparagus, broad beans, Jersey Royals & beurre blanc.
We then head down to the West Coast of France for a tutored cheese plate, Patricia will select new season cheeses from the Loire & Charente Poitou & Midi Pyrenees
Supper will finish with a delicate spring dessert of Panna Cotta with strawberries.
Each course will be complemented by a wine pairing; we will hopefully have some new additions to our wine list as Patricia is currently in Italy at the Vini Veri wine fair in Verona sourcing wines from small independent wine makers.
This promises to be a delicious and inspiring supper celebrating seasonal produce & small producers.

A Cheese & Wine Tasting hosted in Japanese

Patricia's booked was first published in Japan in 2011, following an enthusiastic response we are delighted to offer our Japanese customers the first in a series of afternoon tastings hosted by Kiko Ito, one of our cheese room affineurs.Kiko will be giving an introduction into the different styles of artisan farmhouse cheese, looking at the different milk types and what to look for when choosing the perfect seasonal cheese plate.
Kiko will also guide guests through simple pairings of wine and beer and even sake.

Patricia & Sarah head of to Ireland on the 3 April to co host a tasting of Spring cheese with Avoca at Salt, Monkstown.
Kevin Sheridan from Sheridans Cheesemongers and master butcher, author Pat Whelan will also be there.
They will be serving a three course supper featuring local artisan cheeses & ingredients paired with wines specially designed by Salt head chef, Mark McGillycudd.
This delicious and informal evening will feature talks about seasonal cooking, sourcing locally and of course, cheese.

Easter Treats: A Children's Workshop

Michelle & Patricia will be back at the helm for our annual Easter cookie workshop.
Once all the budding little chefs are kitted out with chef hat & apron they will begin decorating chocolate Easter nests, ginger bread men, Easter buns & cookies all under Patricia & Michelle's watchful eye with a prize for the best Easter Egg picture
Hot chocolate & apple juice will also be provided along with a box to take home all their cookies & cupcakes.

St Patricks Day Tasting

We will be celebrating St Patrick's over the weekend of the 17March, in anticipation we invite you to join us at La Fromagerie Highbury for a tutored tasting beginning with Black Velvets & smoked salmon on soda bread with Ryefield followed by a tasting of Irish cheese tutored by Tara & Aidan.
We will be exploring the very best cheeses from the Emerald Isle from Maja Binder's KILCUMMIN from Castlegregory in Co. Kerry to the fresh crumbly SAINT TOLA from Co. Clare which we will taste at varying stages of ripeness & the classic Irish blues from Co. Tipperary with Louis & Jane Grubb's fabulous awarding winning CASHEL BLUE alongside CROZIER BLUE; a relatively new cheese produced from the milk of a flock of sheep recently established on the limestone pasturelands near Cashel - actually made by Henry & Louis Clifton Browne - nephews of Louis and Jane Grubb!
There will be something to suit every palette, they will be paired with La Fromagerie Biscuits and a glass of La Biere de la Fromagerie from the Pitfield Brewery in Epping a delicious Light Ale in the old fashioned sense with a lovely smooth texture and just enough bite to stand up to those pungent Irish cheeses. We will also pair the cheese with a lightly chilled glass of Rene Quenard's Gamay from the Savoie
The tasting will finish with Le Piantagioni Coffee & Chocolate Guinness Cake.
This promises to be a delicious and informative tasting celebrating regional pairings at their best.

Valentines: 1952 - 2012: 60 Glorious Years

Valentines, this year, has a slightly more nostalgic feeling as 2012 celebrates our Queen's Diamond Jubilee, so we invite you to join us as we make the Royal toast with the Queen's favourite cocktail of a Martini, shaken not stirred with Sacred Gin & a lemon twist, proving that Diamonds Really are Forever. For those preferring more sparkle in their glass we will serve Crémant d'Alsace, a perfect pairing to Ole Hansen's smoked salmon our Norwegian inspired homage to the 6^th Olympic Games which opened in Oslo, Norway on February 14^th 1952...
For our menu we have taken inspiration from the British chefs shaping our culinary future back in 1952 with George Perry Smith's Salmon en Croute with pealeaves to sublime classic dishes from Elizabeth David & Jane Grigson of Chicken in a delicate Tarragon Sauce with seasonal vegetables, Patricia will choose the perfect British cheese plate, with supper finishing on a most regal note with Marguerite Patten's Queen of Puddings.
Each course will paired with wines along with a showing of the classic Anna Neagle movie 'Sixty Glorious Years' about the courtship and marriage of Queen Victoria to Prince Albert...okay so maybe there will be a little romance after all...

As with all La Fromagerie Valentines suppers this is not a typical Valentines, the emphasis is on good food, wine & company (on long communal tables with only a few tables of two available) - it will be memorable with perhaps a more light hearted approach to the 14th; not necessarily for those in search of a quiet romantic evening...

Billecart-Salmon Champagne Tasting Supper

We are delighted to be joined by James Thomas of Billecart-Salmon Champagne House for a truly decadent evening tasting some of the very best Champagnes from this legendary champagne house.
James will conduct a ‘tasting journey’ exploring these complex and diverse Champagnes that are so much more than just an aperitif, taking food & wine pairings to whole new level. From delicate Blanc de Blanc, Brut 2004, Brut Sous Bois, a unique cuvee entirely vinified in oak to their stunning Rosé finishing with a Demi Sec.

Patricia will co host with James as we devise thoughtful and sophisticated pairings of champagne alongside such dishes as delicate Sole in a Blanc de Blanc Champagne sauce with Samphire to a twice baked soufflé with Sous Bois from Switzerland and one of Patricia’s favourite dishes inspired by Mon Vieil Ami in Paris of steamed root vegetables in a delicate broth finished with slivers of foie gras.
Supper will finish with a perfectly paired cheese plate & ‘Champagne Rhubarb’ with Panna Cotta.
This promises to be delicious and insightful evening, which no doubt, after a rather grey January we will be in need of a little decadence.
