Sheep Semi-Soft

A smooth textured cheese with a brine-washed thin natural rind. Hand made on the farm and matured for 6 weeks before releasing for sale. The season is from December to September and summer cheeses will have the benefit of animals grazing on high mountain pastures giving a more floral, herbal taste and the winter cheeses will have a rich and buttery taste. The cheese is in the Reblochon style with the texture becoming more dense as the cheese ages.
