This 3.5kg cheese is made by placing the curds into square cloth 'bags', then gently rolling to give them rounded edges. The super-aged versions, matured up to two years, are gold medal winners – the long, slow ageing gives the flavours a big hit and a dry, almost crystalline crumble. Once brined and left to dry naturally, the special rub mixture of oil (soya & safflower) and bitter cocoa is rubbed over the cheese to finish.
