TRADITIONAL RENNET

Based on the Phillip Olivier classic, Camembert au Calvados, this English version is made exclusively in-house at La Fromagerie. Where Olivier uses a Camembert for his base, we've adapted it with Tunworth, made by Stacey Hedges' Hampshire Cheese Company. After carefully removing the rind, the cheese is soaked for twenty-four hours in Somerset Cider Brandy. We then coat the cheese in a crumb of our own label Oat Biscuits and continue maturation for a further week. The result is decadent and delicious; the sharp apple acidity of the brandy cuts the natural vegetal notes of the Tunworth, creating a wonderfully balanced modern British classic.
