100% Dolcetto. Fabrizio Ressia took over his Grandfather's estate in 1997, and immediately started to update and develop new practices. This Dolcetto is delicious and different. There is a lot going on with the flavours, since the fermentation has been temperature controlled at a cool degree in damp conditions and after a malolactic fermentation the wine is left to rest in wooden barrels for 18 months. Then the wine is passed into stainless steel tanks for 30 days before bottling. What you get in the glass is a rich, almost impenetrable garnet red with dark cherry/violet edges. The aromas are rounded, intense with hints of vanilla and wood-rose. The taste is well balanced, full bodied and rounded, with a moderate dryness that is low in acidity. Perfect for roasted meats, simple stews, pasta and all the lovely Piedmontese cheeses.
